Before starting a provisioning list, creating a meal plan based on the number of days and meals of the trip and preparing the list accordingly is the most effective way to avoid missing items during shopping. When planning provisions, the number of people on board, the route, the number of days at sea, the vessel’s storage and refrigeration capacity, and galley facilities must be taken into account. Although sea markets are available in some regions, in many cases you may need to wait until reaching the nearest port to obtain a missing item. Since each boat’s refrigerator, freezer, and dry storage areas differ and are limited, shopping should be done to last until the next reliable resupply point.

Before the tour, personal meal preferences should be identified and a menu prepared in line with the boat’s galley facilities; any allergies, special diets (vegetarian/vegan/gluten-free, etc.), and children’s menu expectations should be clearly communicated. • Fresh products: Items that need to be consumed quickly, such as meat, fish, and greens, should be scheduled for the earliest meals after shopping; if possible, they should be sourced as fresh as possible from resupply points along the route.
• Ice and cold chain: If cocktails or cold drinks are planned, sufficient ice and ice packs should be arranged; raw products should be stored separately from cooked foods and placed on the lower shelves.

Recommendations for Long Trips (Weekly+ Cruises)
• Long-shelf-life products: Reduce reliance on fresh items by diversifying legumes, pasta, canned goods, rice, breakfast items, and snacks.
• Cyclical menu: Menus that repeat in 2–3 day cycles help improve stock management and reduce waste.
• Intermediate resupply plan: Identify reliable ports/markets along the route in advance and plan fresh provisions according to these stops.

Galley & Storage Checklist
• Equipment: Condition of stove/grill/oven, coffee machine/kettle, pots and pans set, knives, cutting boards, serving utensils.
• Consumables: Drinking water, soda/mineral water, hot beverages (coffee/tea), breakfast items, snacks, fruits and vegetables.
• Cold chain: Separate containers for meat/fish/deli items, zip-lock bags, cling film, and refrigerator organizers.
• Cleaning & hygiene: Dishwashing detergent, sponges/cloths, paper towels, trash bags, surface cleaner, hand sanitizer.
